Rosie Ice Cream

(Foolproof No-Churn Recipe)

The use of sweetened condensed milk — with its lower water content — helps minimise ice crystal formation, resulting in a consistently smooth, creamy texture. Paired with the warming, floral depth of our Rosie blend, it’s a dessert that feels both nostalgic and quietly decadent.

  • 300ml double cream
  • 1 tin ( 397g) sweetened condensed milk
  • 2 tablespoons Rosie botanical cacao blend
  • 2 teaspoons of Rose water (optional but worth it )
  • A pinch of fine sea salt

No churn | Serves 6–8 | Freezes overnight.

How to make it:

1. In a mixing bowl, whip the cream until soft peaks form.
2. In a separate bowl, stir together the condensed milk, Rosie powder and Rose Water ( if using ).
3. Gently fold the whipped cream into the condensed milk & Rosie mixture until fully combined.
4. Pour into a freezer-safe container, cover, and freeze for at least 6 hours or overnight.
5. Let it soften for 5 minutes

This botanical ice cream pairs beautifully with:

  • Warm poached pears in cinnamon and vanilla
  • A buttery blackberry crumble with spiced oats or roasted sticky figs with a drizzle of honey
  • A few scattered rose petals or a pinch of nutmeg on top

Rosie Overnight Oats Recipe

Serves 1 | Make the night before

  • 50g rolled oats
  • 1 tbsp chia seeds (optional, for extra fibre & texture)
  • 1 tbsp Rosie botanical blend
  • 200ml choice of milk
  • 1–2 tsp maple syrup or honey (to taste)
  • Pinch of sea salt

To top (optional but encouraged!)

  • A dollop of coconut yoghurt
  • Crushed nuts or cacao nibs
  • Edible rose petals

How to Make It:

1. Add oats, chia, Rosie, and salt to a jar or bowl.
2. Pour over your milk and sweetener. Stir well.
3. Cover and refrigerate overnight (or at least 4 hours).
4. In the morning, stir and top with your favourites.

Nothing to See Here “After Dark”

A seasonal aperitif of botanicals and dark sweet rum, made for cooler nights.

Ingredients (per glass):

  • 1 tea bag Nothing to See Here tea (brewed strong, then chilled)
  • 40 ml dark rum
  • 10 ml maple syrup (adds natural warmth + depth)
  • 10 ml fresh lime juice
  • Ice

Method:
1. Brew your tea strong (200 ml hot water, steep 7–10 mins), let cool, and chill.
2. In a shaker: combine rum, 60 ml chilled tea, maple syrup, and lime juice. Shake with ice.
3. Strain into a glass and fill with ice.

To Serve:

  • 1 cinnamon stick (as garnish & stirrer)
  • Thin apple slice or orange peel (optional extra garnish)
